Bypassing cat for race car 98 mustang v6? - mustang roll cage

We work with a 98 mustang v6 have modded suspension and full roll cage added, etc., but the exhaust has is, do not throw codes or go to limp mode, but you want to make it less restrictive and harder, I would like to eliminate or break a cat converter.
